There’s nothing quite like a hot tomato soup to warm the cockles on a winters day! Try out this simple recipe, we promise you won’t be disappointed…
(Makes about 12 portions)
3 roughly chopped red onions
4 cloves roughly chopped garlic
1 dessertspoon dried oregano
1 tin tomatoes
4 large fresh tomatoes, roughly chopped
3 Tablespoons tomato puree
250 grams chopped bacon optional
6 pints water
1 dessertspoon liquid chicken stock or 3 chicken stock cubes
Freshly ground pepper
Fry the onions, garlic, oregano and bacon in 1oz butter. 2 mins later add 1 dessertspoon plain flour, cook 2 mins on low heat. Add water, tomatoes and the tomato puree, and the stock cubes. Simmer about 30 mins, puree in a liquidizer or stick blender and serve with crème fraiche.
